Quick and Easy Baked Oatmeal (Vegan + Gluten Free)

I was craving baked oatmeal the other morning, just to change it up from my usual microwave with water oats. Thankfully, it only took a couple minutes to prepare, and I got ready for the day while it baked in the oven for 30 minutes. This recipe is very easy to customize, and it's the perfect texture being a little gooey on the inside and not the thick texture most people don't like about oatmeal. I topped mine with the coconut yogurt, peanut butter, and strawberries, but the options are endless of course! Other recipes I've tried use flax eggs or eggs to bind together, but I found this after baking to be soild enough for me with just the mashed banana. I'll definitely be making this in the future (it's also a great meal prep idea), as it was warm, comforting, and very filling.
Serves 2
Ingredients:
- 1 cup rolled oats
- 1 cup almond milk
- 2 tsp maple syrup
- 1 medium mashed banana

optional
- cinnamon
- vanilla extract
- fruit: berries, bananas, dried fruit
- nuts: walnuts, pecans, macadamia
- cocoa powder
- chopped dates
1. Preheat oven to 350 degrees and grease a 1 pound mini loaf pan. Mix all ingredients together in a bowl and stir.
2. Pour mixture into loaf pan and bake for 25-30min. (depending on how gooey you'd like the center to be). Let cool for at least 10 min. before serving.
