The Simplest Qunioa Pizza Crust

I'm pretty stoked about today's post because I've found a way to have pizza and not feel too guilty about it. I've seen other recipes for quinoa breadsticks and whatnot, but I decided to make it into a crust. It is seriously SO easy and blew my mind with how great it was. It's definitely not going to taste like your run of the mill Little Caesar's, but it will (hopefully) satisfy your cravings.

I topped mine with some roasted sweet potatoes, pesto, peppers, tomato, and onion. It was so filling and easy to reheat in the toaster oven so I could have it for lunch a dinner. It was the bomb.

-1 C quinoa soaked in 1 C water overnight
-a couple tablespoons of water 
-2 T olive oil
-2 tsp baking powder
-spices, salt, seasonings, etc. 

1. Preheat oven to 425 F. Blend the quinoa, oil, and baking powder together. Add as much water as needed until it has the consistency of a pancake batter. 
2. Pour onto lined baking sheet (or circle pan) that has been greased with olive oil (this is very important). 
3. Tap the pan on the counter to level out the batter no thinner than 1/4 inch. Bake for 10-12 minutes until the edges are crispy. Flip and bake for another 12 minutes. 
4. Put on your favorite toppings and bake for an additional 10 minutes. Let cool for a couple minutes and then enjoy!
